Easy Chicken Enchiladas
Written by admin on April 15, 2008 – 6:50 pm -My husband LOVES Mexican food, so he’s always asking me to go to Mexican food restaurants. I think that Mexican food restaurants are a waste of money. You spend $15 a person for something that you can make at home for like $2. So, I make quite a bit of Mexican food at home…this way he gets his Mexican tooth (doesn’t have the same ring as “sweet tooth” does it? Oh well, thought I’d at least try to be clever) pleased, while I get to save our restaurant outings for Italian or sushi restaurants…now THAT’s worth the money! Anyway, here is one of my favorite simple and inexpensive Mexican recipes:
Chicken Enchiladas
- 3 chicken breasts, cooked & cubed
- 1 small can green chili sauce
- 1 can cream of chicken soup
- 1 can olives, chopped
- 1 can green chilies, chopped
- shredded cheese
- tortillas
- Preheat oven to 350°
- In a medium bowl, combine chicken, half of green chili sauce, half of cream of chicken, half the olives & half the green chilis.
- Put about 1/4 c mixture into tortillas. Sprinkle with a small handful of cheese. Roll up and put into a baking dish, seam side down.
- Mix together remaining chili sauce & cream of chicken. Pour over top of enchiladas.
- Top with remaining olives & green chilis, & a couple generous handfuls of cheese.
- Bake until warmed through and cheese is melted (about 15 minutes).
- Enjoy…these are delicious!
Recommendations:
- Chicken: If you don’t already have some cooked chicken on hand, try this quick method.
- Green chili sauce: You’ll find this by the red enchilada sauce, but it’s green instead (sometimes called green enchilada sauce).
- Olives: I buy the pre-chopped kind, saves time!
- Green chilies: I buy the pre-chopped kind, saves time!
