The Perfect Chicken Salad Sandwiches
Written by admin on June 3, 2008 – 2:03 pm -Yeah, you heard me right, I said the PERFECT chicken salad sandwiches. So many chicken salad recipes are too dry, or too moist, or too bland…but this one has the perfect amount of seasoning, chicken, and mayo. And I know that it has a really simple list of ingredients, but you’re really going to love the surprise flavor that you get from the ginger. And it matches so perfectly with the flaky buttery croissants (even though I have made it a few times with wheat hoagie rolls when I wanted to save money…definitely not as good, but a good inexpensive alternative!).
I made this a couple years ago for a mother’s day picnic, and now, instead of wanting a whole elaborate meal, my mother-in-law requests this for every mother’s day! Try this recipe…I promise it’ll be your new favorite recipe for picnics, etc…
Croissant Chicken Salad
- 3 cups cooked cut up chicken*
- 3/4 c. mayonnaise
- 1/2 tsp ginger
- 1/2 tsp salt
- fresh ground black pepper, to taste*
- 1 c. celery, chopped
- 1/3 c. green onions, thinly sliced
- 1/2 c. almonds*
- 1 c. red grapes (optional, but HIGHLY recommended!)*
- croissants
- Combine all ingredients (except croissants).
- Right before serving, spoon a generous serving into each croissants.
Recommendations:
- Chicken: If you’re in a rush, I’d recommend using this quick cooking method. If you’re not in as much of a rush and want more flavorful chicken, try this method from Barefoot Contessa!
- Pepper: The original recipe doesn’t originally call for pepper, but I add pepper to pretty much everything that’s not sweet, so I add it!
- Almonds: I usually use sliced almonds for this.
- Grapes: The original recipe doesn’t call for these, but I WOULD NOT make this without them! They add a sweetness that really brings out the ginger, and they add great color!
- Servings: About 6 servings?
