The SIMPLEST Chicken Tacos
Written by admin on April 15, 2008 – 7:25 pm -One of my best friends from college is from a small town about 3 hours from where we went to college, so we would go home to visit her family often on weekends. Every single time we went out there her mom would make us the same thing: chicken tacos and frog eye salad. This wasn’t because she couldn’t make anything else (actually, I’ve gotten quite a few good recipes from her!), it was because we INSISTED she make that for us every single time we went out there. It wasn’t until I had been friends with Lynzi for a few years that I finally asked her for her mom’s chicken tacos recipe. She told me the recipe and I argued with her for a few minutes insisting that we weren’t talking about the same chicken tacos (”you know, the ones she makes for us every time we go out there? You must be talking about some other chicken tacos!”), because they were JUST TOO EASY! She insisted she was giving me the right recipe, and I honestly didn’t believe her until I made them myself! SOOO good….please try these, I promise they’ll become one of your weeknight “go-to” meals!
Barcy’s Chicken Tacos
- chicken breast, cooked & cubed
- sour cream
- salt & black pepper
- flour tortillas
- desired garnishes (chopped tomatoes, cheese, salsa, etc)
- Preheat oven to 350°
- Mix the cooked, cubed chicken with enough sour cream to coat it (be generous), season it w/a little salt and a lot of black pepper, & pour it into a sprayed baking dish.
- Bake for 30 minutes.
Recommendations:
- Chicken: If you don’t already have some cooked chicken on hand, try this quick method.
- Ingredient amounts: You might have noticed that I didn’t give any quantities on any of the ingredients. This is just because it all depends on how many people you’re trying to feed! That’s what’s so nice about this recipe…it’s so simple to feed a really small or a really big group. Usually I’d plan on about 1 chicken breast per person (I actually usually use more because I like leftovers), and then like I said use enough sour cream to cover it, being generous because it’s gonna bake for a while.
- Baking time: I usually bake this for 30 minutes because it’s really good how the sour cream bakes into the chicken & makes it very moist (that’s why you want to use quite a bit of sour cream, so it doesn’t dry out). But, sometimes when I’ve been in a rush, I’ve used a little less sour cream and baked it for a shorter time. Still good, but not AS good as when you let it bake for the full 30 minutes.
